Infusing spirits with sloes, the inky, dusky blue fruit of the mythical blackthorn bush, has been a tradition in Ireland that goes back for centuries. Here locally sourced sloes are added to Paula McIntyre original gin and, as a nod to Paula’s Scottish ancestry, combined with Dundee honeyberries to add depth of colour and flavour.
Raw honey from the Ards Peninsula in County Down, where the bees feast on borage and clover flowers, balances the lip puckering astringency of the berries. Enjoy this elixir on its own over ice or with tonic.

SLOE SUNDAE
50ml Paula McIntyre Sloe Gin
5ml Elderflower cordial
125ml Cream soda
50ml Crémant
Garnish: 1 blackberry + 1 sprig fresh mint
Build the Paula McIntyre Sloe Gin and elderflower cordial over ice and stir gently. Top with cream soda and Crémant, then garnish with a blackberry and fresh mint sprig.
NORTH COAST COLLISION
35ml Paula McIntyre Sloe Gin
25ml Paula McIntyre Rum
25ml Apricot liqueur
Top with 50ml sparkling apple juice
Garnish: dehydrated apple slice
Shake the Paula McIntyre Sloe Gin, rum and apricot liqueur over ice. Strain into a chilled glass, then top with sparkling apple juice. Garnish with a thin dehydrated apple slice.
